Did you know that other than some fibre, the cucumber is low in nutrients with negligible beta carotene in the skin and once you peel it then it's gone? You would then have to eat huge amounts just to benefit from the Vitamin C, potassium, and iron cucumber contains. But don't worry too much cucumbers have other important properties - such as silicea and sulfur which stimulate the kidneys to release uric acid. They also contain an enzyme that splits protein and helps clean the intestines.
The diuretic action helps rid the body of accumulated fluid within pockets of the body such as under the eyes, abdomen and extremities. Cucumber contain a lot of water that helps to stimulate the lymphatic system ,release unwanted excess, detox the body and help alkalize the blood.
The long cucumbers are smoother with fewer seeds and are usually used in salads. The shorter ones are used for pickling and cooking. Personally I prefer the shorter ones for my salads.
How to Choose:
Cucumbers are eaten under-ripe, (Dark Green). The long ones may be bitter (Ripe Ccamber). The medium or shorter ones that are firm and feel heavy, bumpy but not coarse are best.
Once home, cut off the end and discard. Cut another thin slice and taste it. If it tastes bitter, discard the cucumber. This means its too old (ripe) and there is no trick that I know of that works to remove the bitter taste.
Tips:
Cucumber salads should be prepared just before serving to retain the crispness, however, some people prefer them wilted as they release their water content quickly.
If you don't want the cucumber to water down your salad, cut them as you will use them or cut them sprinkle over salt and allow to sit for an hour refrigerated. Drain and dry on paper towelling before continuing with your recipe. This works rather well when mixed with other ingredients such as dips and avoids the problem of a watery product if it is not served immediately.
For the Holidays I love to stuff the with cream, feta or blue cheese and sour cream with smoked salmon, crab or shrimps . Slice in thick rings and using an apple corer, remove the centre and fill. Alternatively, slice lengthwise, core and stuff. Nutritious and delicious!
